Recipe: Medicated Creamy Smoked Salmon Pasta
- 1 tbsp CBD olive oil by Big Horn Olive Oil Co.
- 3 garlic cloves (minced)
- 1 shallot (minced)
- 1 c heavy cream
- 4 oz ricotta
- 2 oz parmesan
- 1 tbsp dried basil
- 1.5 tsp dried oregano
- 1/2 tsp red pepper
- 1-2 tsp ground coarse sea salt
- 1 tbsp ground peppercorns
- 1 lb uncooked pasta
- 1/2 c lemon juice
- 1/2 c reserved pasta water
- 6 oz smoked salmon
- salt & pepper to taste
Start boiling well salted water in a medium saucepan to cook pasta.
Heat CBD olive oil over med-high in a large skillet. Add minced shallot & garlic cloves, simmer until lightly browned.
Add pasta to boiling water. Boil as directed on package.
Reduce heat under skillet to medium. Add heavy cream, ricotta, parmesan, basil, oregano, salt, ground & red pepper.
Strain pasta, reserving 1/2 c of the water. Add lemon juice to pasta water then pour into cream sauce, stirring well.
Increase heat to med-high under the skillet and allow sauce to simmer until reduced 1/2 way, stirring often.
Fold smoked salmon into the sauce to warm through.
Fold in cooked pasta, season to taste with salt and pepper, serve, & enjoy!
